Congrats on 20s
It's hard to say without knowing what you do now. I cycle through 1-9 at least twice with no pencil marks, then depending on how hard the rest of the puzzle looks, decide whether to mark it up or not. You often don't even have to make marks, then you're pretty much guaranteed a sub 3-minute puzzle.

You've only been playing a month and already your times are pretty good. Give it a few years?
Thrust basically said everything that I was too lazy to type ..

The following is for people who regularly score under 1 minute on easy:

Once you've played enough, you can basically think about other things while you're playing and not even really be focusing on the grid. At that point you really need to smooth out your game and work on efficient movement.

- Try just moving the phone a little bit farther away from you to get a better picture of the puzzle as a whole, try to obstruct as little of the grid as possible with your fingers.

- Try using one finger to select your digit and another finger or two to fill in squares (as thrust said, it's tricky to break the one finger habit).

- When you're completing a particularly easy digit, already be looking for the placements for the next one; hesitation is a HUGE time killer and keeping moving at all times is pretty essential.

Your finger speed typically becomes the limiting factor after a few years of playing easy mode. My lowest score on easy is 0:27, but I believe it would be entirely possible to finish a puzzle in 20 seconds or less.
There are more logical deductions. The 4 and 9 in the upper right zone are a pair, so all other numbers can be eliminated from those two cells. That means the 5 can be eliminated from the middle row of the upper middle zone. The 9s can be eliminated from the bottom row of the upper left zone (they obviously can't go anywhere except for the two cells in the middle row of that zone). This makes a pair of 1 & 4 in the third column, so the 4 can only go in row 2(from top), column 6.

Hopefully the above made sense to anyone other than myself, the puzzle is pretty easily solvable from there.
Do you use digit first entry? Is scanning your primary method?
This could stand to be fixed. The current leader has submitted 3 scores.
Cuz haters hate, thats why.
