Just purchased the app, upgraded from the free version. I want the input to be like the free one. However the Behaviour/difault digit entry mode is grayed out and is not available. How do I make it look like the free one, with the number pad on the bottom of screen?

Use the "Digit entry style" setting to change it to "Buttons". This is the setting right above the "Default digit entry mode" one.
